  • ¾ cup Oat Flour
  • ½ cup Unsweetened Applesauce
  • 1 Egg (for crust)
  • ¾ cup Pumpkin Puree
  • 1 Egg (for filling)
  • ¼ teaspoon Ground Cinnamon
  • ¼ cup Plain Greek Yogurt (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, stir together oat flour, unsweetened applesauce, and 1 egg until combined.
  3. Scoop about 1 tablespoon of crust dough into each cup of a 12-cup mini muffin pan.
  4. Use a small spoon to press the dough down in the center and up the sides to form shallow crust shells.
  5. Bake the crusts for 8 minutes, then remove the pan from the oven.
  6. While the crusts bake, mix pumpkin puree, 1 egg, and ground cinnamon in a bowl until smooth.
  7. Spoon roughly 1 tablespoon of the pumpkin filling into each crust shell.
  8. Return the pan to the oven and bake for 10 minutes at 350°F, until the filling is set.
  9. Remove the pan and let the pies cool completely in the pan or on a wire rack.
  10. Carefully pop the mini pies out of the muffin tin once cooled and, before serving, add a small spoonful of plain Greek yogurt on top of each pie.
