Delightful Zesty Baked Zucchini Sticks are a healthy snack that’s both crispy and flavorful.

  • 2 medium Zucchini (fresh, firm)
  • 1 cup Breadcrumbs (regular or panko)
  • 1/2 cup Grated Parmesan Cheese (or nutritional yeast for vegan option)
  • 1 teaspoon Garlic Powder (fresh garlic or garlic salt can be used)
  • 1 teaspoon Onion Powder (optional)
  • 1 teaspoon Smoked Paprika (regular paprika works too)
  • 1 teaspoon Salt (kosher or sea salt recommended)
  • 1/2 teaspoon Black Pepper (freshly ground)
  • 2 large Eggs (flax eggs can be substituted for vegan)
  • Cooking Spray or Olive Oil (as needed for extra crunch)

Instructions

  1. Preheat your oven to 4256F (2206C) and line a baking sheet with parchment paper.
  2. Slice the zucchini into uniform sticks, ideally about 1/2 inch thick.
  3. Mix the breadcrumb coating in a large bowl. Combine breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Beat the eggs in a separate bowl until well combined.
  5. Dip each zucchini stick into the eggs, allowing excess to drip off, then roll in the breadcrumb mixture.
  6. Arrange the coated zucchini sticks on the baking sheet, leaving space between them, and drizzle with olive oil or spray with cooking spray.
  7. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  8. Cool slightly before serving.
