Instructions

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the all-purpose flour, pumpkin pie spice, baking soda, baking powder, and salt until well combined.
  3. Cream the softened unsalted butter with brown sugar and granulated sugar using a hand mixer until the mixture becomes light and fluffy.
  4. Mix in the pumpkin puree, the large egg, and vanilla extract until everything is well blended and smooth.
  5. Slowly add the dry flour mixture into the wet ingredients and mix just until the batter is smooth, avoiding overmixing.
  6. Carefully fold in the chocolate chips until evenly distributed.
  7. Scoop about 1 tablespoon of dough per cookie onto the prepared baking sheets, spacing about 2 inches apart; optionally press a few extra chocolate chips onto the tops for a pretty finish.
  8. Bake for 10 to 12 minutes until set (about 10 minutes for softer, chewier cookies). Repeat baking with remaining dough as needed.
  9. Let cookies cool briefly on the baking sheet, then transfer to a wire rack to cool completely.
