Juicy grilled pork and sweet pineapple skewered with colorful veggies, all glazed with a smoky BBQ sauce.

  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 1 fresh pineapple, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1/2 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using wooden skewers.
  2. Cut pork tenderloin into 1-inch cubes.
  3. Cut pineapple into 1-inch chunks.
  4. Cut red onion and green bell pepper into 1-inch pieces.
  5. In a small bowl, whisk together BBQ sauce, olive oil, soy sauce, garlic powder, and black pepper.
  6. Place the pork, pineapple, red onion, and bell pepper in a large bowl.
  7. Pour the BBQ sauce mixture over the pork and veggies and toss gently to coat.
  8. Thread pork, pineapple, onion, and bell pepper alternately onto skewers, leaving space between pieces.
  9. Preheat the grill to medium heat.
  10. Place skewers on the grill.
  11. Grill skewers 15 to 20 minutes, turning every few minutes, until pork is cooked through and veggies are tender.
  12. Brush extra BBQ sauce onto skewers during the last few minutes of grilling for a sticky glaze.
  13. Remove skewers from the grill and let rest for 1–2 minutes.
