Golden, buttery peach crumb bars with a tender crust, juicy peach filling, and crisp crumble topping. Easy to make with fresh, canned, or frozen peaches.

  • 2 cups (250 g) all-purpose flour
  • 1 cup (200 g) granulated sugar
  • ½ cup (100 g) brown sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 170 g (¾ cup) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups (450 g) fresh peaches, peeled and diced (or canned/frozen, drained well)
  • 2 tablespoons cornstarch
  • ¼ cup (50 g) sugar (adjust to peach sweetness)
  • 1 tablespoon lemon juice
  • ½ teaspoon cinnamon

Instructions

  1. Preheat oven to 180°C (350°F) and line a baking pan with parchment paper.
  2. Peel and dice peaches if fresh, or drain and dice canned/frozen peaches.
  3. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  4. Add melted butter, egg, and vanilla extract to dry ingredients and mix until crumbly dough forms.
  5. Press about two-thirds of the dough firmly and evenly into the bottom of the prepared pan to form the base.
  6. Toss diced peaches with cornstarch, sugar, lemon juice, and cinnamon until evenly coated.
  7. Spread peach filling evenly over the crust, reaching edges.
  8. Crumble remaining dough evenly over the peach filling, leaving small gaps.
  9. Bake for 35–40 minutes until topping is golden brown and filling is bubbling.
  10. Cool bars completely in the pan.
  11. Use parchment paper edges to lift bars and cut into squares.
