A quick and easy one-pan pasta dish inspired by Puglia, Italy, where linguine is cooked together with cherry tomatoes, onion, garlic, and basil in a single skillet, producing a creamy, flavorful sauce without the need to boil pasta separately.

  • 12 ounces cherry or grape tomatoes, halved or quartered if large
  • 1 onion, thinly sliced (about 2 cups)
  • 4 cloves garlic, thinly sliced
  • 1/2 teaspoon red-pepper flakes
  • 2 sprigs fresh basil, plus torn leaves for garnish
  • 2 tablespoons extra-virgin olive oil, plus more for serving
  • 2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 1/2 cups water
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Thinly slice the onion and garlic; halve or quarter the cherry tomatoes so pieces are similar in size; tear and reserve basil leaves for garnish.
  2. In a large straight-sided skillet, combine linguine, tomatoes, sliced onion, sliced garlic, red-pepper flakes, basil sprigs, olive oil, salt, black pepper, and water.
  3. Bring the skillet mixture to a lively boil over high heat.
  4. Boil, stirring and turning the pasta frequently with tongs to keep strands separate and to release starch, until the linguine is al dente and almost all the water has cooked off, about 9 minutes.
  5. Taste the pasta and adjust seasoning with additional salt and pepper if needed.
  6. Divide the pasta among bowls and garnish with torn basil leaves, an extra drizzle of olive oil, and plenty of freshly grated Parmesan cheese; serve immediately.
