Instructions

  1. Preheat oven to 350°F and line two 8×4-inch loaf pans with parchment paper.
  2. Whisk together the flour, sugar, baking soda, baking powder, salt, and spices in a large bowl until evenly combined.
  3. In a separate bowl, whisk the eggs, pumpkin purée, vegetable oil, and water until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir just until everything is moistened, avoiding overmixing.
  5. If using mix-ins (nuts, raisins, or chocolate chips), toss them with a little flour and fold into the batter just before baking.
  6. Divide the batter evenly between the prepared loaf pans.
  7. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. If the tops brown too quickly near the end of baking, tent the loaves loosely with foil for the remaining time.
  9. Let the loaves cool in the pans for about 10 minutes.
  10. Transfer the loaves to wire racks and cool completely.
