A cozy, flavorful side dish featuring tender roasted carrots and green beans coated in a sweet honey glaze with warm cinnamon and nutmeg spices.

  • 1 pound green beans, trimmed (about 450g)
  • 2 tablespoons olive oil (30ml)
  • 1/4 cup honey (60ml)
  • 2 tablespoons lemon juice (30ml)
  • 1 teaspoon ground cinnamon (5ml)
  • 1/2 teaspoon ground nutmeg (2.5ml)
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (15ml) for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk together olive oil, honey, lemon juice, ground cinnamon, ground nutmeg, salt, and pepper to create the glaze.
  3. Add sliced carrots and trimmed green beans to the bowl and toss well until vegetables are evenly coated with the glaze.
  4. Spread the coated vegetables in a single, even layer on a baking sheet, avoiding overcrowding.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until carrots are tender with caramelized edges and green beans are tender yet slightly crisp.
  6. Remove from oven and transfer to a serving dish.
  7. Sprinkle with chopped fresh parsley for garnish and serve immediately.
