Instructions

  1. Melt 2 tablespoons butter in a large pot over medium heat.
  2. Add 1 medium diced sweet onion, 2 diced celery stalks, 2 peeled and sliced medium carrots, and 1/4 teaspoon kosher salt; sauté, stirring occasionally, until vegetables soften (about 5 minutes).
  3. Add 2 minced garlic cloves and cook until fragrant, about 30–60 seconds.
  4. Pour in 48 ounces low-sodium chicken broth and stir in 2 teaspoons dried Italian seasoning, 1/4 teaspoon black pepper, and the remaining 1 1/4 teaspoons kosher salt; bring to a boil, then reduce heat and simmer gently for 10 minutes.
  5. Add 2 1/4 cups dried egg noodles; simmer, stirring occasionally, until noodles are tender (about 8–10 minutes), checking package directions for timing.
  6. Stir in about 1/2 pound (≈1 cup) shredded or chopped cooked seasoned chicken breast and heat through for a few minutes.
  7. Taste and adjust salt and pepper as needed.
