An easy and creamy pumpkin soup packed with warm spices and fresh flavors, perfect for cozy fall meals and holiday starters.

  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 1 apple, peeled, seeded, and chopped
  • 4 garlic cloves, minced
  • 1 bay leaf
  • 29 ounces pure pumpkin purée
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon paprika
  • 1/8 teaspoon ground cloves
  • Freshly ground black pepper, to taste
  • 4 cups vegetable broth
  • 2 tablespoons pure maple syrup
  • 1/2 cup coconut milk (can use heavy cream)
  • Garnish: drizzle of coconut milk or heavy cream and toasted pepitas

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the chopped onion and apple and cook until soft, about 5 minutes. Then add the minced garlic and bay leaf and cook for an additional minute to build flavor.
  2. Stir in the pumpkin purée, grated fresh ginger, kosher salt, ground cinnamon, ground nutmeg, paprika, ground cloves, freshly ground black pepper, and vegetable broth. Mix well and let the soup simmer gently over low heat for 10 minutes. Remove and discard the bay leaf before blending.
  3. Using an immersion blender, blend the soup directly in the pot until smooth and creamy. Alternatively, let the soup cool slightly and blend in batches in a countertop blender with the lid vented to avoid splatters.
  4. Stir in the coconut milk (or heavy cream) and pure maple syrup. Taste and adjust salt and pepper as needed.
  5. Toast pepitas in a dry skillet over medium heat until fragrant and slightly browned.
  6. Ladle the soup into bowls, finish with a swirl of coconut milk or cream, sprinkle toasted pepitas on top, and serve warm.

Store cooled soup in an airtight container in the fridge for up to 5 days., Freeze soup for up to 3 months; thaw overnight in the fridge and gently reheat before serving., Adjust soup thickness by adding more broth to thin or simmering longer to thicken., For a different sweet note, try using pear instead of apple., Use an immersion blender for safest blending; when using a countertop blender, vent lid and blend in small batches., To make soup kid-friendly, reduce or omit warming spices and add extra maple syrup for sweetness.
