A warm, creamy, and comforting potato soup recipe using bite-sized potatoes that comes together in about 30 minutes and serves 4 hearty portions. Topped optionally with shredded cheese, bacon, and scallions for extra flavor.

Instructions

  1. Prepare ingredients; dice bite-sized potatoes if needed.
  2. Add potatoes and chicken broth to a large Dutch oven or heavy pot and bring to a boil; cook until potatoes are tender (about 10 minutes).
  3. Meanwhile melt butter in a saucepan, add chopped onion and sauté until softened, then add minced garlic and cook 12 minutes.
  4. Sprinkle in flour and whisk into the onion and garlic mixture to form a roux.
  5. Slowly pour in the milk while stirring constantly and cook over medium heat until the mixture thickens.
  6. Pour the creamy milk mixture into the pot with the cooked potatoes, including all the broth, and season with salt and pepper.
  7. If desired, transfer about half the soup to a blender or use an immersion blender; pulse or blend until smooth for a silky texture, or mash slightly for some texture.
  8. Stir the soup to combine after blending or mashing.
  9. Ladle soup into bowls and top with shredded cheese, crumbled bacon, and chopped scallions if desired.
