A cozy and comforting slow-cooked chicken dish featuring tender chicken breasts cooked in a creamy Parmesan garlic sauce with sun-dried tomatoes and fresh spinach, rich in classic Italian flavors.

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes (preferably oil-packed, drained and chopped)
  • 3 cups fresh baby spinach
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Optional: chopped fresh basil or parsley for garnish

Instructions

  1. Pat chicken dry and season both sides with salt, black pepper, and Italian seasoning.
  2. If using dry-packed sun-dried tomatoes, soak them in hot water for about 10 minutes, then drain and chop.
  3. Mince garlic and grate the Parmesan cheese.
  4. Optional: heat olive oil in a skillet over medium-high heat and sear chicken 2–3 minutes per side until golden.
  5. Place the seasoned or seared chicken in a single layer in the bottom of the crockpot.
  6. Whisk together heavy cream, chicken broth, minced garlic, and grated Parmesan until smooth.
  7. Pour the creamy mixture over the chicken and scatter the chopped sun-dried tomatoes on top.
  8. Cover and cook on low for 4–6 hours or on high for 2–3 hours, until chicken reaches 165°F (74°C) and shreds easily with a fork.
  9. About 10–15 minutes before serving, stir in fresh baby spinach and allow it to wilt into the sauce.
  10. Taste the sauce and adjust salt and pepper as needed; if sauce is too thin, remove chicken and simmer sauce on the stove to thicken, or add a splash of broth or cream if too thick.
