  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell peppers (red or yellow), diced
  • 1/4 cup fresh cilantro, chopped (optional)
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse black beans under cold water until foam disappears. Drain well.
  2. Chop bell peppers, red onion, and cilantro into small pieces.
  3. In a large mixing bowl, combine black beans, corn, tomatoes, bell peppers, onions, and cilantro.
  4. In a separate bowl, whisk together lime juice and olive oil; pour over the mixture.
  5. Season with salt and pepper; toss gently until everything is coated in the dressing.
  6. Chill in the refrigerator for at least 30 minutes before serving.
