A delightful fall dessert combining a buttery pie-like crust, creamy cheesecake layer, cinnamon-spiced apples, and a crisp crumb topping, optionally drizzled with caramel sauce.

  • 1/2 cup packed brown sugar
  • 3/4 cup cold butter, cut into cubes
  • 2 (8 oz) packages cream cheese, softened (brick style)

  • 2 large eggs
  • 3 medium apples (preferably Granny Smith), peeled and chopped into 1/4–1/2 inch pieces
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup all-purpose flour
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup quick-cook oats
  • 1/3 cup cold butter, cut into cubes
  • Optional: caramel sauce for drizzling

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pulse 2 cups flour, 1/2 cup packed brown sugar, and 3/4 cup cold cubed butter in a food processor until crumbly.
  3. Press the crumbly mixture evenly into a parchment- or foil-lined 13×9-inch pan sprayed with nonstick spray.
  4. Bake crust for 15 minutes, then remove from the oven.
  5. Beat two 8-oz packages softened cream cheese until light and fluffy.
  6. Add 1/2 cup sugar and 1 teaspoon vanilla extract; mix until smooth.
  7. Beat in 2 large eggs one at a time until just combined.
  8. Spread the cheesecake mixture over the warm crust.
  9. Toss peeled and chopped apples with 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 2 tablespoons sugar.
  10. Sprinkle the spiced apples evenly over the cheesecake layer.
  11. Pulse 3/4 cup flour, 3/4 cup packed brown sugar, 1/2 cup quick-cook oats, and 1/3 cup cold cubed butter in the food processor until crumbly.
  12. Sprinkle the crumb topping evenly over the apples.
  13. Bake the assembled bars for 25–30 minutes until the filling is set and the topping is golden.
  14. Cool to room temperature, then refrigerate until fully chilled before slicing.
