A creamy and comforting slow cooker white chicken chili made with tender chicken, two types of white beans, green chiles, fresh herbs, and cream cheese, perfect for cozy nights and easy meal prep.

  • 1 lb. boneless, skinless chicken breasts or thighs
  • 1 (4 oz.) can diced green chiles
  • 1 (15 oz.) can cannellini beans, drained and rinsed
  • 1 (15 oz.) can great northern beans, drained
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh lime juice, freshly squeezed
  • 2 cups chicken broth (or bone broth or vegetable broth)
  • 1 cup chopped onion (yellow, white, or sweet)
  • 3 cloves garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon chili powder
  • 8 ounces cream cheese, softened and cubed

Instructions

  1. Chop the onion and mince the garlic cloves.
  2. Rinse and drain the cannellini and great northern beans.
  3. Cube the softened cream cheese.
  4. Measure and chop the cilantro and squeeze about 2 tablespoons fresh lime juice.
  5. Add all ingredients except the chicken (beans, diced green chiles, chopped onion, garlic, spices, cream cheese cubes, chicken broth, and lime juice) to the slow cooker and stir to combine.
  6. Nestle the chicken pieces into the slow cooker and cover with the sauce and bean mixture.
  7. Cover and cook on low for 7 hours or on high for 4 hours, until the chicken is tender and the chili is bubbling.
  8. Shred the chicken in the pot using two forks and stir the shredded chicken back into the chili.
  9. Just before serving, squeeze additional fresh lime juice and sprinkle the chopped cilantro over the chili.
