Ingredients

Scale
  • 1 lb. boneless, skinless chicken breasts or thighs
  • 1 (4 oz.) can diced green chiles
  • 1 (15 oz.) can cannellini beans, drained
  • 1 (15 oz.) can great northern beans, drained
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons lime juice (from about 1 lime)
  • 2 cups chicken broth (or bone broth / vegetable broth)
  • 1 cup onion, chopped (yellow, white, or sweet)
  • 3 cloves garlic, minced
  • ½ teaspoon cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon chili powder
  • 8 oz. cream cheese, softened, cut into cubes

Instructions

  1. Chop the onion and mince the garlic.
  2. Rinse and drain the canned cannellini and great northern beans.
  3. Cut softened cream cheese into cubes so it melts evenly.
  4. Measure cilantro and squeeze lime to get 2 tablespoons of juice.
  5. Add all ingredients except the chicken to the slow cooker and stir to combine.
  6. Nestle the chicken pieces into the slow cooker and cover them with the sauce and bean mixture.
  7. Cover and cook on low for 7 hours or on high for 4 hours, until the chicken is tender and bubbling.
  8. Shred the chicken with two forks directly in the pot and stir to combine with the chili.
  9. Finish with a squeeze of fresh lime juice and chopped cilantro just before serving.

Notes

Use thawed chicken for best results; if using frozen, add extra cook time and ensure chicken is fully cooked before shredding., Cut softened cream cheese into cubes before adding to help it melt evenly; for extra creaminess, add some cream cheese off heat at the end., Chicken thighs yield juicier and more tender meat than breasts in slow cooking., Rinsing and draining canned beans reduces saltiness and prevents over-thickening., Avoid lifting the slow cooker lid during cooking as it increases cooking time., For thicker chili, mash about 1 cup of beans against the slow cooker sides after cooking and stir back in or simmer uncovered on stove., Serve with toppings like avocado slices, shredded cheese, extra cilantro, hot sauce, or lime wedges., Use rotisserie chicken as a shortcut by adding shredded chicken during the last 30 minutes of cooking to heat through.
