Easy slow cooker chicken noodle soup with lean chicken, fresh veggies, savory herbs, chicken stock, and wide egg noodles, perfect for cozy meals on chilly days.

  • 1 pound boneless skinless chicken breasts
  • 2 cups carrots, peeled and sliced 1/4 inch thick
  • 1 1/2 cups yellow onion, 1/2 inch dice
  • 1 cup celery, 1/4 inch pieces
  • 2 teaspoons minced garlic
  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 1/2 teaspoons fresh thyme, chopped, or 3/4 teaspoon dried
  • 1 teaspoon fresh rosemary, chopped, or 1/2 teaspoon dried
  • 2 dried bay leaves
  • 8 cups unsalted chicken stock or broth
  • 8 ounces wide egg noodles
  • 1 tablespoon chopped parsley

Instructions

  1. Peel and slice carrots 1/4 inch thick, dice the onion 1/2 inch, cut celery into 1/4 inch pieces, and mince the garlic.
  2. Place boneless skinless chicken breasts, carrots, onion, celery, garlic, salt, pepper, thyme, rosemary, bay leaves, and chicken stock into a 6‑quart slow cooker.
  3. Cover and cook on high for 3 1/2 hours or on low for 5 1/2 hours until chicken reaches 160ºF (71ºC).
  4. Remove chicken to a clean plate, cover to keep warm, shred just before serving.
  5. Add dried wide egg noodles to slow cooker and cook on high for 25 to 30 minutes until tender.
  6. Return shredded chicken to slow cooker, cover and cook 5 minutes on high to reheat. Adjust seasoning as needed.
  7. Sprinkle chopped parsley over soup before serving.

Recipe yields about 8 cups; serving size is about 1 cup per person., Store cooled soup without noodles in airtight container in refrigerator for up to 5 days., Freeze soup without noodles for up to 3 months; thaw in refrigerator overnight or cold water bath., Reheat soup on stovetop over medium heat until hot and steaming, adding extra stock or water if thickened; add noodles during reheating if stored separately., For best noodle texture, cook noodles at the end and add just before serving to prevent them from becoming mushy.
