  • 3 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1½ cups uncooked brown rice
  • 2 cups shredded cheddar cheese

Instructions

  1. Cut 2 boneless, skinless chicken breasts into 1-inch pieces.
  2. Chop ½ onion and measure 1 teaspoon minced garlic, 1 teaspoon salt, and 1 teaspoon black pepper.
  3. Add the chicken pieces, minced garlic, salt, pepper, chopped onion, 3 cups chicken broth, 1 can (10.5 oz) cream of chicken soup, and 1½ cups uncooked brown rice to the slow cooker.
  4. Stir everything well to combine.
  5. Cover and cook on high for 3½ to 4 hours, until the rice is tender and has absorbed the broth.
  6. Optional: Stir in frozen vegetables (peas, carrots, mixed veggies) during the last hour of cooking if using.
  7. Stir in 2 cups shredded cheddar cheese, cover, and let sit 5–7 minutes to melt the cheese.
  8. If the mixture is too thick, stir in additional chicken broth a splash (about ¼ cup) at a time to reach desired consistency.
  9. Serve warm.
