A Chipotle-inspired chicken burrito bowl served over cilantro lime rice, loaded with chipotle-spiced chicken, fresh vegetables, black beans, and avocado. High in protein and perfect for meal prep or quick dinners.

  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 3 chipotle chilis in adobo sauce, finely chopped, plus 1 ½ tablespoons adobo sauce
  • 1 ½ teaspoons garlic powder
  • ¾ teaspoon salt
  • 1 ½ pounds chicken breast, cut into strips
  • 1 cup long-grain white rice, rinsed
  • 1 ½ cups water
  • ¼ teaspoon salt, plus more to taste
  • 1 lime, zested plus 2 tablespoons fresh lime juice
  • ¼ cup chopped cilantro
  • 1 head romaine lettuce, chopped
  • 1 cup tomatoes, diced
  • 1 cup frozen corn, thawed
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ small red onion, chopped
  • Guacamole or diced avocado

Instructions

  1. Whisk together olive oil, lime juice, finely chopped chipotle chilies, adobo sauce, garlic powder, and salt in a large bowl.
  2. Add chicken strips to the marinade, toss to coat, cover, and refrigerate for at least 2 hours or up to overnight.
  3. Heat a large skillet over medium-high heat, remove chicken from the marinade, and cook, stirring occasionally, until cooked through (about 5 minutes); transfer chicken to a plate and set aside.
  4. Bring water to a boil, add rinsed long‑grain white rice and salt, cover, reduce heat to low, and simmer 15–18 minutes until the rice is tender and water is absorbed.
  5. Fluff the cooked rice with a fork, then stir in lime zest, lime juice, and chopped cilantro; adjust salt to taste and set aside.
  6. Assemble bowls by layering cilantro lime rice and chopped romaine, then top with cooked chipotle chicken, diced tomatoes, avocado or guacamole, rinsed and drained black beans, thawed corn, and chopped red onion.

Marinate chicken longer (up to 24 hours) for deeper flavor and tenderness., Store chicken, rice, and toppings separately to keep fresh for meal prep., Reheat chicken and rice in microwave or skillet until hot; add fresh toppings before serving., Freeze cooked chicken and rice only, not the fully assembled bowl, for up to one month., You can substitute chicken thighs, shrimp, ground beef taco meat, or tofu as protein., For low-carb, substitute cilantro lime cauliflower rice or broccoli rice instead of white rice., Serve with crunchy sides like pita chips or sweet potato chips and various fresh salsas for added flavor.
