A light, fluffy, and stable whipped cream frosting made with mascarpone or cream cheese, heavy whipping cream, powdered sugar, and vanilla. Perfect for cakes, cupcakes, and fruit toppings, offering a silky texture and beautiful piping consistency.

  • 1 ½ cups heavy whipping cream, very cold
  • 8 oz mascarpone cheese, cold (or substitute with full-fat cream cheese)
  • ½ cup powdered sugar, sifted
  • 2 tsp vanilla extract
  • 12 tbsp honey or sweetened condensed milk (optional)

Instructions

  1. Chill the mixing bowl and beaters (or whisk attachment) in the fridge or freezer for 10–15 minutes and keep the heavy cream and mascarpone ice-cold.
  2. Place cold mascarpone in the chilled bowl and beat on low for about 30 seconds until smooth, being careful not to overmix.
  3. Pour the cold heavy whipping cream into the mascarpone and start whipping on low speed, gradually increasing to medium-high until soft peaks form (about 2–3 minutes).
  4. Sift the powdered sugar, then add the powdered sugar and vanilla extract (plus honey or sweetened condensed milk if using) once soft peaks appear.
  5. Continue whipping until stiff, glossy peaks form and the frosting holds its shape; check frequently to avoid overwhipping.
  6. Stop whipping as soon as peaks are firm and glossy to prevent graininess.
  7. Let the frosting rest for 5 minutes before piping to allow it to firm up.
  8. If the frosting looks grainy, gently fold in a little extra cold cream by hand to smooth it out.
  9. If the frosting is too soft, chill the bowl briefly and give it a short rewhip to firm up.
