A cozy, comforting unstuffed cabbage roll soup with classic cabbage roll flavors made easy. It features ground beef, chopped cabbage, carrots, rice, tomato sauce, and beef broth simmered together for a hearty, family-friendly meal.

  • 1 lb. lean ground beef
  • Salt and pepper, to taste
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 (8-ounce) cans tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp. light brown sugar
  • 2 tbsp. fresh chopped parsley

Instructions

  1. Heat vegetable oil in a Dutch oven or large soup pot over medium-high heat.
  2. Add ground beef, season with salt and pepper, and cook until browned.
  3. Add diced onion and minced garlic; cook 2–3 minutes until onions soften.
  4. Stir in chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked white rice, bay leaf, and brown sugar; mix well.
  5. Bring to a gentle simmer and cook uncovered about 25 minutes, until rice and vegetables are tender.
  6. Remove the bay leaf, sprinkle with chopped fresh parsley, and stir before serving.
