Instructions

  1. Preheat the oven to 350ºF (180ºC).
  2. Line a 9-inch pie dish or baking sheet with parchment paper for easy cleanup.
  3. Place the thawed puff pastry sheet into the pie dish and blind bake it for about 10 minutes: cover the pastry with parchment paper and fill with baking beans or rice to prevent puffing.
  4. While the base bakes, prepare the apple filling by tossing the sliced apples with brown sugar, ground cinnamon, nutmeg, and a pinch of salt in a large bowl.
  5. Once the puff pastry base is partially baked, remove the baking beans and parchment, and let the base cool slightly.
  6. Spread the spiced apple slices evenly over the puff pastry crust.
  7. Arrange the sliced cinnamon roll dough pieces snugly on top of the apple filling, placing them close to each other as they will puff and spread during baking.
  8. Bake the assembled pie in the oven for 25 to 30 minutes until the cinnamon rolls are golden brown and the apple filling is bubbly.
  9. While the pie is baking, whisk together powdered sugar, water, and a pinch of cinnamon to make a simple glaze.
  10. When the pie has cooled slightly, drizzle the glaze evenly over the cinnamon roll topping.
